- Hot water draws the soluble elements from coffee grinds when you start the brewing process; if it brews too long, your grind is too fine, or the water is too hot then it can become bitter
- Adjust the grind size according to the brewing method, for example, a French Press brew uses a longer dwell time and so requires a coarser grind
- Water acts as a better solvent at temperatures between 90 and 96 °C—near boiling; go well above that and you’re in danger of ‘burning’ the coffee
