- If the grind is out it will throw the whole flavor; aim for a coffee grind the same texture as sugar granules
- Tamp it like a professional; elbow at a 90 degree angle, portafiller on a flat surface, and just the right amount of pressure (30lb exactly) for a smooth finish
- For the perfect 2 oz. shot, brew between 20 – 30 seconds, it’s worth experimenting around to get your timing and adjustments for consistent future perfection
